Emu Cake Recipe  

Made With Emu Meat, This Is A Hearty Spice Cake, Loaded with Protein and Susrprisingly Delicious

 

Heat oven to 350′

 

Cake

1 pound – ground emu (uncooked)

3 cups – brown sugar

½  tsp. – salt

 

1 tsp. cinnamon

2 cups – flour

½  tsp. – ground cloves

 

2 cups – raisins

1 cup – hot coffee

½ cup – chopped nuts

1 tsp. – baking soda

 

DIRECTIONS

  • In a large bowl mix the uncooked emu, brown sugar & salt (mixing by hand is the easiest). 
  • Add cinnamon, flour & cloves; mix well. 
  • Add & mix raisins, coffee, nuts & soda.

 

Bake in greased 9″ x 13″ baking pan at  350′ for 35-40 minutes. Turn out to cool.

Frosting

3 oz. – cream cheese

½ cup – softened butter

2 cups – powdered sugar

 

Cream together the cream cheese, butter and powdered sugar.  Spread over cooled cake.
